Happy September!! Fall is just around the corner and what better recipe for this month than my easy, nutrient dense, chili?!
This recipe is super simple and SUPER TASTY. This is not vegan or low calorie or trendy in any way - just straight up healthy, nutritious foods. However, you can alter ingredients to fit your dietary preferences and it wont hurt my feelings, in fact I would love for you to comment below with your own chili recipes! Sharing is caring! <3
2 lb. Lean Ground Turkey (93/7 lean)
2 cans black beans
1 can cream corn
1 can rotel (diced tomatoes & chilis)
8 oz. fat free cottage cheese
half packet dry Ranch seasoning
full packet of Chili seasoning (any type)
1. Cook turkey in a skillet over medium heat until browned through
2. Drain beans and rinse, then add to crockpot
3. Add cream corn, rotel, seasoning packets, and cottage cheese
4. Add cooked turkey to crockpot
5. Cover crockpot, cook on HIGH for 4 hours
It is so simple! I like to add some reduced fat cheddar and non-fat Greek Yogurt (to replace sour cream) on top before I dig in!
***Pro Tip: pick up a box of crockpot liners when you get the rest of your ingredients and save a ton of time on clean up :)
